    I have searched the directories and cannot seem to find any recipes
    using Paul Purdomme's seasoning.  I have recently been turned onto them
    and have found myself using them on everything from meats to potatoes
    and also eggs.  I was wondering if anyone else out there used them and
    had any good recipes to use this stuff (I think I am hooked and find
    myself cooking with it at least 3-4 times a week.)

    Maybe Paul Purdomme's Seasoning is a counterfeit brand imitation?
    
    There are, however, 59 references to Paul Prudhomme in this notes file
    though most are to his cookbook(s) and his restaurant such as 103.3,.8
    and 117.9 though some, such as 166.3 refer specifically to one or
    more of his seasonings.

I've had good success with the recipes in Paul Prudhomme's Louisana Kitchen
cookbook, but the recipes in there mix up the seasoning blends from scratch,
not using the Magic Seasoning Blends line of bottled seasonings.  However, I
do use Prudhomme's Blackened Steak Magic for blackened steak rather than mix
up my own.  It works very well.

    I make the blackend steak all the time and it's great.  here's the
    resipe....
    
    Ingredients:
    Paul Prudhomme blackend steak spice
    3 to 4 tablespoons melted butter or margarine
    Shell sirloin steak/T-bone or what ever you like
    
    Make some slices across the streaks, brush on melted butter.  Then
    sprinkle the blackend steak spice onto steak.  Push into steak with
    the a cutting board.  I put about 1 tablespoon on each side.  Heat
    frying pan, make sure it's real hot.  Add steaks.  Let cook on each
    side on high for about 3 minutes then turn pan down so the steak can
    cook through to your likeing. 
    
    Now that spring is here, cook them on the grill.  This works just as
    good, just make sure the grill is real hot before you put the steaks
    on.

    I also make the blackened steak with Paul's blackened steak spice and
    agree that it's great.
