A woman I work with asked me a question that I didn't know the answer to and looked up 'turkey' under a directory title/search and couldn't find the answer either. She has a turkey carcass - refrigerated - that is over a week old. She wants to make a soup stock from it and needs to know if she can do so without the possibility of getting sick? My first response was 'no'...but then I figured the carcass is going to be boiled - so perhaps it would be o.k.. She said she is going to go home and smell it and make a determination from that standpoint. Anyone have a surefire way of knowing how long to keep it - before it goes bad? Moderators...please feel free to move this to another note if you feel it is inappropriate. Thank you.

Is this a carcass that is left over from a roasted turkey (i.e. already cooked) or is it one where the turkey meat has been cut away before cooking? I'd be less concerned with the cooked version. Monica | |||||

Should be just fine, unless it smells bad or has gone moldy or something like that. Especially since it's going to be boiled to death during the soup- making process, anyway. --PSW |
