| Here is one just in time for March 17th.
IRISH POTATO BREAD
(from Irish linen wall hanging, author unknown)
Mom's recipe for many years.
8 Ozs. of Mashed potatoes
1 teaspoon salt
Pinch pepper
2 Oz. of butter
flour
milk
Mix all ingredients together, using enough flour and milk to make a
stiff dough. Roll out to 1/4" thick. Cut into 8 pieces. Cook on a hot
iron griddle browning on both sides. Delicious with eggs and bacon and
fried green tomatoes. Fry right in the bacon grease.

So Yummy Potatoe Doughnuts
Dissolve together:
1 T yeast
1/3 C warm water
Blend together:
1/3 C sugar
1/3 C butter or marg
2/3 C mashed potatoes (instant)
1/2 t salt
1/3 C hot water
Add to potatoe mixter & mix:
2/3 C cold water
2 eggs
2 T lemon juice
1/2 t grated lemon peel
Stir in dissolved yeast:
Add to above & kneed well to soft dough:
4 C sifted flour
1/2 C dry milk powder
Let rise twice. Roll 3/4 inch thick. Cut with 3 inch
cutters. Fry @ 380 until golden.
Glaze
Mix together:
1 1/3 C powdered sugar
few grains of salt
1/3 C hot milk
1 t vanilla
Dip cooled doughnuts into glaze. Allow excess to drip off.

Do you think I could mix this all in my bread maker and let it do the
work for me?

sorry I haven't replied sooner but I hardly get in here anymore.
Unfortunately I don't do bread, but it's worth a shot I guess.
and you are right, these are goooooooooood.... I had searched for
this rec for almost 2 years before finding it.

| Anybody have a potato bread recipe that is a yeast bread that is baked?
I don't want a skillet bread, more like a regular loaf with potato as
an ingredient. I'm not sure what kinds of proportions to start with,
assuming the potato will weigh it down I'd need more leavening, etc.
Not a baking powder recipe, but a yeast recipe. I don't have a
machine, but if your machine comes with a recipe I can mess around with
it to work in the conventional manner.

| Polish Potato Bread
1 cup lukewarm potato water
1 cup mashed warm potatoes
1 package active dry yeast
1/2 cup lukewarm water
2/3 cup sugar
1 1/2 teaspoon salt
2 eggs lightly beaten
2/3 cup melted shortening (Crisco is good!)
6 to 7 cups flour
1 egg yoke
1/2 teaspoon milk
poppy seeds
Boil enough potatoes to make 1 cup of mashed potatoes.
Save 1 cup of the potato water and wait until warm.
Sprinkle yeast into the warm water and let stand 5
minutes. Melt shortening and let cool. Dissolve sugar
and salt in the warm potato water in a large bowl. Add
eggs, yeast mixture, melted shortening and warm mashed
potatoes, blending well after each addition. Add half
the of the flour (gradually) and beat until smooth (this
can be done with an electric mixer). Add remaining flour
gradually and knead on a floured board until all the
flour is used (You may use a heavy duty mixer with dough
hook). Dough should not stick to your hands. Turn dough
into a buttered bowl (cover all sides with butter).
Sprinkle lightly with flour and cover with wax paper and
then a damp cloth. Refrigerate overnight is desired.
(I don't) May be stored up to a week in the refrigerator.
Punch down as it rises. (I don't) Pinch off dough as
needed for rolls or divide into thirds to make a braided
bread. For hamburger rolls, put on greased sheet and let
rise until light (about1 1/2 hours). Put braided bread
on greased 14 x 20 pizza tray. I also make 2 4x9 loaves
from the batch. Brush with beaten egg yoke mixed with
a little milk. Sprinkle on poppy seed if you like.
Bake in a 350 degree oven, 20 to 25 minutes for loaf.
For dinner rolls, place 12 to 16 balls in a 12 x 12 pan
and bake 15 to 20 minutes. Bake very large braided bread
for 35 to 40 minutes. Use toothpick to test for dry center.
Our oven is at 325 for 40 minutes with very large braid.
