    	1 lb. cranberries
    	1 orange rind, grated
    	1/2 cup orange jiuce
    	1 1/2 cups sugar
    	1 tbsp. gelatin
    	3 tbsp. cold water
    	1 package lemon-flavored gelatin
    	3 tart apples, cored and chopped
    
    Grind cranberries and add orange rind, orange juice and sugar;
    refrigerate overnight. Soak plain gelatin in cold water. Dissolve
    lemon-flavored gelatin in 1 cup boiling water and add soaked gelatin;
    stir until dissolved. Combine with cranberry mixture and add chopped
    apples. Pour into wet salad mold and refrigerate. When firm, unmold
    on watercress or lettuce. Serve with dab of mayonnaise.

			Strawberry Jello Salad

2-3 oz pkg strawberry jello	
1-8 oz pkg cream cheese			
1/3 C finely chopped nuts
2-10 oz pkg frozen strawberries, partly thawed
few drops milk to soften cheese
                   
Mix cream cheese and nuts.  Dissolve Jello in 2 C boiling water.  Then
add 1 C cold water.  Stir in frozen strawberries and juice.  Add cream
cheese and nut mixture.  Break cheese and nut mixture into bite sized pieces
after adding to jello.  Pour into jello mold or 8 by 12 dish.  Chill
overnight or till frozen.   Serves 16.

Strawberry Jello Salad

few drops milk to soften cheese
 
Mix cream cheese and nuts. Dissolve Jello in 2 C boiling water. Then add 1 C
cold water. Stir in frozen strawberries and juice. Add cream cheese and nut
mixture. Break cheese and nut mixture into bite sized pieces after adding to
jello. Pour into jello mold or 8 by 12 dish. Chill overnight or till solid.
Serves 16. 
 
(Use of jello with nutra-sweet would lower the calories in this recipe but
I've never tried it).

    STRAWBERRY-PINEAPPLE SALAD

    1 fruit		72 calories	tr. fat
    16 g carbo		2 g protein	tr. fiber
    1 mg chol		18 mg sodium	
    
    1 small package sugar-free strawberry gelatin
    3/4 cup boiling water
    1 (10 ounce) package frozen unsweetened 
    	strawberries partially thawed
    1 (8 1/4 ounce) can crushed water-packed
    	pineapple, undrained
    1 medium banana, mashed
    Vegetable cooking spray
    1 cup plain, unsweetened yogurt
    
    Dissolve gelatin in water in large mixing bowl, stirring well.  Chill
    until mixture is the consistency of unbeaten egg white.
    
    Fold strawberries, pineapple, and banana into mixture.  Pour half into
    13x9x2 baking dish coated with cooking spray; chill until firm.  Store
    remaining gelatin at room temp.
    
    Spread yogurt evenly over congealed layer.  Pour remaining
    gelatin mixture over yogurt.  Chill until firm; cut into squares to
    serve.
