| Is this a bar-type recipe? I have a recipe for oatmeal bars that have
dried apricots, walnuts, and dried prunes which may be close. You can
eliminate the prunes and nuts without damaging the result. If you
don't get exactly what you want, let me know and I"ll post mine.

| Here's my recipe for Oatmeal Fruit Bars. If it's not exactly what you
are looking for, try it anyway! It's very good...

Olivia's Oatmeal Fruit Bars
Ingredients:
1 1/2 cup all-purpose flour
1/4 tsp. salt
1/2 tsp. baking powder
1/2 tsp. ground cinnamon
1/2 tsp. ground allspice
1 cup firmly packed moist pitted prunes, finely diced (I left them in
big chunks..too lazy : )
1 cup firmly packed moist dried apricots. finely diced (ditto : )
1 cup golden raisins
1/2 cup unsalted butter at room temp.
1 cup firmly packed dark brown sugar
1 tsp. pure vanilla extract
1 large egg, at room temp.
1 cup plus 2 Tbs. olld fashioned rolled oats (NOT Quick Cooking)
Preheat oven to 350. Grease a 13X9 baking pan.
IN a large bowl, combine flour, salt, baking powder, and spices. In
another bowl, remove one tablespoon of the flour mixture and toss the
fruit in it. In another bowl, cream the butter and sugar with an
electric mixer until light and fluffy. Scrape bottom of bowl
frequently (approximately 3-4 minutes). Add the vanilla and egg and
continue to beat for 2 more minutes (it may look curdled, but it will
smooth out). Add the dry ingredients on low speed, then oats, and
finally the diced fruits. Mix by hand if the mixture gets too heavy.
Do not over mix, but continue just until all ingredients an
incorporated.
Pat the dough into the pan. It will resemble a moist dough. Bake about
30 minutes, or until the top is slightly browned, dryish, and soft to
the touch. The bars will firm slightly as they cool. Cool in the rack
until room temperature.
Storage tips : Will keep, tightly wrapped (airtight) for 3-5 days at
room temp. Will keep if frozen for 1 month.
