| Saw this on Frugal Gourmet and gave it a try. Delicious!
Ingredients:
6 good sized sweet potatoes
5 cups granulated white sugar (that's right, 5 cups!)
1 stick of butter
1/2 cup water
Peel potatoes and cut into slices. Put into large pot.
Add water, sugar, and break up stick of butter over top
of potatoes.
Simmer, covered, over low to medium heat until potatoes
are tender and start to get a little brown. The sugar
will liquefy. Don't burn the sugar by using to high heat!
Using perforated spoon place potatoes in serving dish.
You can throw away all the excess liquefied sugar.

| You can make whipped sweet potatoes the same way you make whipped white
potatoes ... boil until soft, add milk and butter, some spice if you
like (nutmeg, cinammon and/or allspice), and whip.
Here's a different type of sweet potato casserole I've been making.
2 large sweet potatoes or yams (about 1.5 lbs)
1 red bell pepper
1 bunch of scallions
2 eggs (or equivalent of egg substitute)
1 small can of corn
2 tbsp margarine
1/2 cup hot 1% milk
1 tsp. ground nutmeg
1/2 tsp. ground allspice
Peel sweet potatoes and cut into 1" pieces. Boil until soft. Drain.
Cut red pepper into small dice. Slice white part of scallions and
saute in margerine until soft, but not brown.
Mash sweet potatoes, add everything else and mix well. Put into a
buttered casserole and bake at 350 degrees (F) for 45 minutes, or until
well browned on top.

| It depends on how hungry people are. If it is one of several side
dishes, it will serve up to 8. Otherwise, probably 6.

Here is one my family always has a thanksgiving....
4 good size sweet pototoes
butter
Orange juice
1 can crushed pineapple
1 package miniature marshmallows
Cook potatoes (i usually zap them in the microwave)
peel and mash (like you were making mash potatoes)
I usually use a hand mixer and add butter (approx 1/4 c.)
drain pineapple and use 1/2 of the can, and add about a 1/2 c.
of orange juice...mix with mixer...should be about mash pototoe
consistancy...you can add more or less of OJ, butter, and pineapple
depending on your tast preference. (put into casserole dish )
place one layer of mini marsh. on top and broil for 1 min.
check frequenyly, you just want to brown the top slightly...
don't worry if you burn it the first time, you can just scrape it
off and try it again..I burnt my firsy batch...

| Dian Wilde entered a recipe in here eons ago for Sweet Potato Souffle, and
it has become a standard at our holiday table. It's the best sweet potato
side dish we've ever had, and it's pretty easy to make. I wouldn't have a
clue as to where you might find it, but it's in here somewhere!

| Found one sweet potato souffle recipe, that sounded pretty good, even
though I can't stand sweet potato.

| This recipe has become a tradition with us for Thanksgiving and
Christmass. It is simple and can be made ahead and just heated
up.
Orange-Candied Sweet Potatoes
8 med. sweet potatoes, pared
1/4 c margarine
1 c brown sugar
2 T honey
1/2 c orange juice
1 tsp orange rind
Half the potatoes lengthwise then brown in margarine in a skillet.
Transfer to a 2 quart casserole dish. Add remaining ingredients
along with any margarine left in skillet.
At this point, you can finish cooking and then reheat or you can
refrigerate and finish cooking later. I usually finish cooking now,
then reheat in the microwave (or oven).
Bake covered, at 450 degrees for 45 mins. Uncover, bake
20 mins. (+/-)more, basting often till golden brown or tender.

It's at 1469.3, and I think I know what I'm taking to the next
potluck.

| I just made this last weekend for thanksgiving.. the sample I had was
GREAT! I borrowed the receipe from ?????
Sweet Potato with apple and Maple Syrup
2-3 apples
2-3 sweet potatoes
maple syrup
cinnamon
brown sugar (optional)
core and peel the apples and slice into wheels � to � inch
peel and slice sweet potato same width (make small rounds)
fry apples in butter till lightly browned
butter bottom of cassarole
layer potato and apples
(you may want to put some brown sugar and cinamon twixt layers.. go
light)
pour maple syrup over top
cover with foil and bake .. say 350 deg for @ 45 min till squash will
squish.

| A slight variation on the previous recipe, from the American Girls Cook
book series (variety of dolls from different time frames in American
history, this recipe is from the "Felicity" book, supposed to be
recipes from the 1750's, Colonial Williamsburg, upperclass) with slight
variations from me....
Sweet Potato/Apple Casserole
4 Sweet Potatoes
4 apples (crisp and juicy are best)
butter/grease
1/4 cup maple syrup
walnuts (optional)
1. Precook sweet potatoes (either bake or microwave) til just soft
2. butter/ grease baking dish (size is up to you, I've made it in a
deep oval dish or a flat 8x14" pan, and both worked fine)
3. peel and cut apples into slices (similar size to apple pie slices)
4. peel (optional) and cut potatos into round slices, ~1/2"
5. place layer of potato, then layer of apple, repeat until all gone
6. pour maple syrup over mixture
7. sprinkle chopped walnuts over mixture (amount depends on your taste)
cover and cook for approximately 25 minutes or until apples are just
soft.
Very colorful and easy to make. I used it both at Thanksgiving for
family and for a holiday buffet. I also use the leftovers for breakfast
(heated in the microwave).
I tried canned yams, when I ran out of sweet potatoes, but not as
colorful and certainly not as tastey. If the apples are sweet, I cut
back on the maple suger. If I'm using a deep dish, I add more maple
syrup.

| Do the potatoes really need to be cooked ahead of time? Seems like
they would cook, sliced, in the same time the apples do.

Haven't tried with it with raw potatoes, so can't really answer this.
However, the time I made it in a deep casserole with four layers of
potato/apple, I don't know if the potato would have cooked enough by
the time the apples were soft. the recipe is better if the apples are
still a little crunchy.
