3293.0. "Oakland Fire=no recipes" by WR2FOR::HARPHAM_LY () Wed Oct 30 1991 16:31

    Hi,

I've never read this conference before, but I have a favor
    to ask all of you.

One of my husband's friends at work lost her house a week and
a half ago in the Oakland hills fire you may have heard about.
Believe it or not, the thing she misses the most are all the
recipes she has collected over the years. So I thought we
might be able to help her out. At first I thought I'd just
peruse this file and pull recipes off, but there are so many,
that seems impractical. So I thought I'd enter a note instead,
    and pose it this way:

If you lost all your recipes, which one would you miss the
most? Could you please enter that recipe here? After
a week or two I'll collect them and give them to my husband
to give to her. I'm hoping to end up with a good variety
of main dishes, side dishes, appetizers, desserts, etc.

Thanks very much in advance --Lynn

Have her write down the titles of as many of her favourite recipes she
can remember. Then, try recreating them when she has a chance. The list
of those she cannot rememeber at all how to make can be posted here; we
can do a group browse through the conference to see where a substitute
may lie, of if we can't find it, post it here.

This way she will have her favourites back, rather than a whole bunch
of things she's never tried. i would think having the ability of making
my favourite dishes back would be very comforting at a time like this.

I have to agree also with -.1. It would be nice if we could find the
recipes your friend is familiar with.

But the Oakland fire is a terrible tragedy and I'm more than happy to
post my favorite recipe on the chance she might like it. Who knows,
maybe we can make something good come out of her loss for her. My
    condolences to your friend.

    Green chili and jack cheese

    1 tbl butter
    1 tbl vegetable oil
1 clove garlic peeled and mashed
    2 chicken breast halves
    1/2 c chicken broth
1 (4 oz) can of green salsa
    1 tsp prepared mustard
    1/2 cup whipping cream
    2 oz jack cheese

Melt butter and oil and saute garlic and chicken. Remove chicken and
garlic and pour off fat. Add chicken broth to pan, stirring up browned
bits. Return chicken to pan with salsa and mustard. (I'd do the salsa
to taste.....) Simmer until chicken is done. Liquid should cook down
and be syrupy. Add cream and simmer til thickened, about 5 minutes.
Sprinkle with cheese (don't be mingy with it, I use more than two
ounces but I also use more than 2 pieces of chicken). Run skillet
    under broiler until cheese melts.

We like this with rice, refried beans and a salad.

    Good luck to your friend!
    Helen

Somewhere in this file is a pointer to a cookbook compiled from this notes file.
It is pretty big and comprehensive. Perhaps someone who knows it's location
could give a pointer.
