If you are having trouble peeling, try this.
Cut into strips(use a clean hack, or hand wood saw) and peel
with a new veg. peeler.
As for the seeds, I clean them off, soak in salt water for a while,
then roast in the oven(300 F) until crunchy.

| Giving this some thought, have you given consideration to whacking it
in half with a large, sharp knife, scooping out the seeds and nuking it
in the microwave till manageable? Seems to me if you're going to make
soup it would be much faster to start with partially cooked pumpkin.
I have an American Indian Cookbook which says to cut the top
ah-la-halloween, scoop out seeds and bake. Did this and didn't like
it. A bit sharp for my unsuspecting tongue. It was interesting
though.

| One of my cookbooks suggests pre-cooking acorn squash in the microwave.
Those are really hard as well. Maybe you could try the same approach
if it will fit in your microwave.
As far as peeling...I cook first, then scoop. No peeling necessary.

| I have a great recipe for Pumkin Seeds:
Clean all the pumpkin off.
Put seeds in a pan, cover with water, add 1/2-3/4 Cup salt
Boil until all the water is out
Bake in over 300 degrees until crisp
Salty I know, but WONDERFUL!
