After much searching without luck I am making the following request. Does anyone have a real recipe for Stewed Tomatoes? My cookbook says "there are good ones available at the store" which is no help to a gardener. I have searched for years to no avail. There must be one somewhere. I know you are supposed to cut them in half horizontally so you can gently squeeze out the seeds (also tart taste) but I'd like an official recipe. Thanks, Kris

Kris: I just got done making a batch, but I have never removed the seeds. hmmmmm.........wonder if I should? Anyway, what I do is heat a large pot of water to boiling. Put in a batch of tomatoes. Let them boil until I see the skins start to split. Remove from the water. Let them cool a little until you can pick them up. While you are letting them cool, put the next batch in to boil. After they are cooled enough to handle: I core and remove the skin (it comes off very easily) cut in 1/4's and put into a large pot. When all tomatoes are in the pot, cook for about 20 minutes. Thanks but what I am looking for is the extra ingredients you find in a can or stewed tomatoes. Basically the ratio of stuff (celery, green pepper, onion, bay leaf, etc.) | |||||

The "extra" ingredients are up to the cook -- I generally put in what ever I have in the frig. As a "guess-timate" for 4-6 tomatoes, 1/2 green pepper, two ribs of celery, 1/2 onion, 1 bay leaf, 1/2 teaspoon basil, 1/2 teaspoon oregano. All of the above is optional and depends on what you have on hand. Try it, write down what you put in, and change it next time to suit your taste. mj | |||||

Thanks, I've changed locations which I am tardy with my thanks. You have no idea how many places I have looked which should have said something. I've canned/frozen for years but I just love stewed tomatoes. Eat them right out of the can. It's getting gardening time and now I can look forward to the rewards 8^) Kris |
