    I'm looking for a recipe for southern style dumplings.  These are not
    the Bisquick-style "bready" dumplings.  They are pasty, more like thick
    noodles.  They contain no baking powder or other leavening.  They can
    be either white or yellow (from chicken stock perhaps?).  My wife's
    mother used to make them in chicken & dumplings; they went into the
    chicken/broth shortly before serving.  We don't have the recipe.
    
    Any other Southerners out there?

    Why shore there's southerners in here.  Here is how you make real
    dumplin's.  Mix flour ( I use plain) with milk until you have a dough. 
    Roll it out onto a floured board and knead it a little til its not
    sticky anymore, addin' more flour as seems necessary.  Then roll pieces
    of it real thin and cut it into strips.  Add to your nearly boilin'
    chicken and broth and proceed with the next batch.  If you wanted to,
    you could add an egg to the flour mixture and have egg noodles.
    
    Not to long ago I was out of regular flour and tried that bisquik
    recipe....my SO took one look at it and said, "what the h*ll is that?"
    I can assure you that if ya'll try this you'll never do bisquik
    "dumplins" again.

    PS the dumplin's turn yellow on account of how much fat is in the
    broth.  If I take the time to de-grease, the my dumplin's are pretty
    white.  Otherwise, they pick up the grease and that turns 'em kind of
    yellow.

Sounds to me that you are looking for "Cracker Meal Balls". These cracker meal 
"dumplings" about 1 to 1.5" round are hand-made with cracker meal and chicken 
broth (NOT defatted). My Grandmother, a Czechoslovakian, made these to go with 
Chicken Fricassee(?) and the gravy always turned out to be quite thick.

Nabisco made the Cracker Meal.

    Thanks!  Can't believe it's just flour and milk!  My wife's mother made 
    these all her life, but Pat never really paid much attention to how she
    did  it.  Now that she's no longer with us, we're craving some of those
    good ol'  dumplings and just didn't know where to begin.
    
    We did make the Bisquick ones, and decided that if that was the only 
    kind we could make, then we'd just live without chicken 'n dumplings. 
    There's no comparison!
    
    BTW, my wife was born in a Charlotte hospital, and grew up in Monroe,
    NC.  After graduating from Wake Forest, she lived in Charlotte for 15
    years or so before she married me and galavanted off to points unknown!

    I think .1 had the ones we're looking for, because we're pretty sure
    Pat's mom used flour for them, not cracker meal.  But thanks anyway!

    WF Deacon greetings to your wife from here in Winston Salem!  I see she
    grew up in John Boy and Billy country.
    
    Recently I screwed up enough courage to try making my dough in my food
    processor and it did just great.  Saves a lot of time!  If ya'll have

    Muellers sells dumplings in a package (packaged and look like egg
    noodles) Anyway, they are pretty good.  You add them to you broth when
    it is boiling and they expand and turn into dumplings.  Unfortunately,
    I have yet to see them in these parts (MASS).  My mom brings them up
    from FLA when she comes to visit.  But still, nothing compares to the
    real thing that my grandmother used to make!!  Chicken and dumplings
    has to be one of my favorite meals!!!  They always taste better on the
    second day too!
