3243.1 | All oil is 100% fat, anyhow | CADSYS::HECTOR::RICHARDSON | | Tue Oct 01 1991 13:05 | 7 |
| Well, all oil is 100% fat. I don't see why sesame oil would contain
any cholesterol at all, but I don't know about saturated fat. You
aren't likely to use more than a teaspoon or so of it in any recipe I
can think of, anyhow. Hopefully someone who is on a diet can look it
up, or at least look up sesame seeds.

| Fat content of sesame oil is 100%. This is true of all oils, fats, and
shortening. Cholesterol is only a problem with animal fats--all vegetable
oils are cholesterol-free. I don't know what the ratio of saturated to
unsaturated fat is for sesame oil (being high in saturated fats is the reason
why the cholesterol-paranoid try to avoid the so-called "tropical oils").

| Unrefined sesame oil is really more of a flavoring than a cooking oil
and I can't imagine using large quantities of it with its
strong flavor - it shouldn't be a problem in "normal use".
Anyway its content is 13 % saturated, 46 % monosaturated, 41 %
polyunsaturated. By comparison, olive oil has 10 : 82 : 8 % and
canola has 6 : 60 : 34 %.
