A friend of mine has frozen fresh basil and says that when she defrosts it, it is watery....anybody have any suggestions on how to prevent this when freezing? Thanks!

If she's freezing for later use as the basis for pesto, she'd be better off blending the basil with oil, and freezing that mixture. When the mixture is defrosted, then the other ingredients can be added. andrew |
