    After seeing a nutritionist, I stated a macrobiotic diet this week
    in order to hopefully improve my chronic asthma.  I am not allowed
    dairy products (something I expected) and I commented to the
    nutritionist that I would really miss cheese.  He told me about a dairy
    free "cheese" and gave me the following recipe:
    
    ======================================================================
                         Oat Cheese

	3 cups quick oats
	2 tablespoons sunflower seed
	2 tablespoon tamari soy sauce
	1 teaspoon dill
	1 teaspoon thyme

	Mix and place in pot.  Add water slowly along the side of the
        container  until you see it at the top of the mixture.  Cover and
        let stand for 3 days in a cool dark place.  Once done, move it to 
        the refrigerator.  It will keep for quite awhile.

        I made this and I think I used a little too much water.  It looked
        horrible when I pulled it out of the closet.  Actually, it did not
        smell great either.  I added some quick oats to make it a little 
        firmer and put it in the refrigerator.  Yesterday, I made a
        sandwich spreading this on some sprouted sourdough bread and it
        smelled a little better (I was still pretty skeptical).  Lunch
        time came and I pulled the sandwich out and stared it down for
        a few minutes and decided to just dive in and try it.  Well, it
        turned out to be wonderful (make that WONDERFUL!).  It definitely
        tasted like cheese and better than a lot I have had.  I used fresh
        dill and it tasted good.  Later, I compared notes with my housemate
        who also had reservations and found that she, too thought it was
        great.  Now we have made the basic, I think variations could be
        easily made with spices.
    
        If you are dairy restricted (or even not) and want a real treat,
        try this.  Don't let initial appearance fool you - it's a winner.

    Sounds interesting, to say the least!  ;^)
    
    When you say "cover and let stand...", do you mean with a tightly
    fitting cover (such one you get with a tupperware container), or a 
    loose-fitting one (like a cheesecloth cover, to let the mixture
    "breathe")?

    The initial instructions from the nutritionist were unclear as to type
    of cover.  I used a cheap (very cheap) imitation of tupperware type
    stuff.  The seal seemed pretty good and the product was good.  I have
    more due to be ready tomorrow and this time I added some fresh parsley
    to the dill.

    	When you put down sunflower seed as one of the ingredients, I hope
    	you didn't mean the ones that you buy at the supermarket for the
    	birds, with the hulls and everything. Is this a silly question, or
    	am I supposed to assume that you have to take them out of the
    	hulls, or can you buy them without hulls ?.

    The sunflower seeds I bought were shelled and unroasted.  We have a
    food co-op here that sells them in bulk.  A health food store will also
    sell them.  I've seen them at some markets as well.

I bought the dill weed and made up a batch a week ago today.  I agree
with you in that it looks awful and smells worse.  Surprisingly, it
does taste like cheese!

I have a couple suggestions/hints for others interested in trying this
recipe.  If you can't find tamari soy sauce at your usual grocery store,
you can find it at Joyce Chen's.  And to avoid adding too much water,
try pressing down in the center of the dish while adding water along
the edges.  Stop adding water the minute your fingers sense water.  It's
very easy to add too much water.

I have a question on how long this dairyless cheese will keep.  I noticed
mold on it last night.  Is this normal?

    Well, curiosity got the better of me and I whomped up a batch of this
    "dairyless cheese" this Tuesday.  when I checked it today, it didn't
    smell too bad, but it did look pretty horrendous. :^)  I suspect that
    I didn't add enough water, 'cause the flakes of oatmeal on the top were
    still dry.  I added a little more water this morning and will check the
    stuff again tomorrow--and, if it looks "good" (not in the traditional
    sense), I'll give it a try.

    The experiment failed.  Adding extra water didn't help--it only turned
    it into a gluey, stringy mess.  I did taste it.  It was awful--nothing
    like Denise described in .0 
    
    I'm sure I must have done something wrong--probably the lack of water
    at the start.  However, I don't think I'll bother trying this again...
