3181.0. "BREAD: Bath Buns" by HYEND::FTSEC () Tue Aug 13 1991 17:47

    Help,

I'm looking for a recipe for Bath Buns and Escalloped Apples.
Bath Buns are an English roll with dried fruit, I think it is a
yeast dough, but I'm not sure. My grandmother used to make them.

Escalloped Apples you can buy in Stouffer's frozen section sometimes.
I haven't seen them up here very often, and they are very expensive.
I'd prefer to make my own so there's enough for everyone without a
    fight to the death.

Here's a recipe for Bath buns, though I confess I haven't
actually tried it. They sound good though. The glaze and
sugar chunks sound very sweet but I don't think you should
omit that step; these buns should be somewhat sticky.
(TBS = tablespoon, tsp = teaspoon)

BATH BUNS

1 package yeast
1/2 cup warm water
1 tsp sugar
3 cups flour (preferably bread flour)
1/2 tsp salt
1 tsp nutmeg
1 egg, beaten
1/2 cup warm milk
2 TBS butter, melted
1/2 cup golden raisins
2 TBS candied peel
12 sugar lumps

Glaze:
2 TBS milk
3 TBS sugar

Prove yeast.
Sift flour, salt, nutmeg.
Add liquids, egg and butter.
Mix, add fruit, knead, let rise, punch down.
Shape into 10-12 balls. Let rise again.
Bake at 400, 15 minutes.
To make glaze stir sugar into milk and heat gently and stir
until sugar dissolves.
Crush sugar lumps into irregular chunks.
Brush buns with glaze while they're still warm and sprinkle with
sugar chunks.
