I made this last night and it's great.  I took the recipe from 
Richard Simmons Deal-A-Meal Golden Edition Cookbook.

                    POLLO LINGUINE

4 tsp    virgin olive oil
6 oz     boned, skinned chicken breast, cut into bit-size pieces
1 clove  garlic, minced
1/2 tsp  dried basil, crushed
1/2 c    sliced mushrooms
4 cups   cooked, drained linguine noodles
1-1/2 c  steamed broccoli flowerettes
1 egg    lightly beaten
1/2 c    halved cherry tomatoes
3 tbs    grated Parmesan cheese
Salt and freshly ground pepper to taste
Freshly ground nutmeg to taste

Directions

1. Heat oil in large non-stick skillet and saute chicken, garlic, 
   and basil about 4 minutes.
2. Add mushrooms and saute briefly.
3. Stir in noodles and broccoli and heat through.
4. Add egg and stir over medium heat to creamy consistency.
5. Add tomatoes and Parmesan.
6. Season to taste with salt, freshly ground pepper, and nutmeg.
7. Toss thoroughly.

Makes 4 servings - 295 Calories per serving.
