I am looking for a special type of sausage, hopefully in the Worcester to So NH area. In French, it is spelled "Mergaise", and is believed to be either Algerian or Morrocan in origin. Loosely described as a "spicy type of sausage, resembles a hot dog in outside appearance, and is generally cooked over an open fire; ideally a charcoal fired barbecue". It seems to be more of a class of sausages, rather than one type of sausage. Its not often that my French children make a special request for favorite foods, so I'd like to try to locate some for them. I *assume* I could probably find it in Boston, if I knew where to look; or at the El Morrocco in Worcester (if its still there). It was an old note (#249) which referred to it. From their description, it "sounds similar to" (forgive my bad italian interpretive spelling) Choission (gad, sounds more like "saucisson" ... French for 'cold cuts' .. You might try some of the middle eastern markets in Belmont (MA). On Belmont St. you might try Eastern Lahmajune (sp?) Bakery. They have a large selection of middle eastern goods. If they] don't have it, they might be able to point you to a place. Nearby, on Mt. Auburn St. there are a number of markets, centered about a fruit stand who's name escapes me. In Worcester, I wouldn't bother with El Morrocco. Its an Armenian Restaurant, not Morrocan. If you have a Worcester phone book, look under Markets? there was a fairly well stocked middle eastern market in town, but again the name escapes me (???? Tarver's, Aris's ????) Perhaps another noter familiar with Belmont or Worcester can give you better directions. As an aside, is Mergaise made with Lamb, Beef, or Pork? /Sam | |||||

Merguez (that's how I've always seen it spelled) is a North-African sausage. I'm not sure how much luck you'll have in the Armenian markets in Watertown as their stock is generally more middle-eastern than North-African. You might try calling Savenors butcher shop in Cambridge as they claim to have meat of every variety. The closest North African restuarants that I know of are in Montreal, although there are probably some in New York. Other spicy sausages are the Portugese Linguica or the Spanish Chorizo which I've seen in local super markets. Good luck. | |||||

An excellent spicy sausage similar to a merguez is Andouille sausage. Bread & Circus stores sell an Andouille sausage made by The Pork Schoppe (or something like that); both the pork and turkey varieties are first-rate. The closest Bread & Circus to Worcester might be in Newton (Beacon & Walnut Streets). --Mr Topaz | |||||

I rummaged around in my cookbooks last night and found a recipe for merguez (made with beef) in one of my Morroccan cookbooks. If anyone's interested I'd be willing to post it. /Sam | |||||
