3070.0. "Lima Beans (Fordhook)" by MCIS1::MICHAELSON () Thu Jun 06 1991 09:35

    I happen to like limas, but use only the frozen fordhook lima in any of
    the dishes I make - they are hard to find tho. I usually use them in a
    rice and bean dish that I make. Also steamed with butter, or with a
    light cheese sauce.

Simple pleasures department:

Dice an onion and cook in a skillet until soft, but not browned. Add and
fry a pound of ground round, breaking up with a fork, until no pink
remains. Drain fat. Add 1 large can diced tomatoes in tomato juice,
and season with pepper, garlic salt, etc. to taste. Add 2 cups almost-cooked
macaroni. Stir and cook without a lid until the liquid is reduced.
Add a bag of frozen lima beans, stir into mixture. Add lid and cook until
lima beans are done. Remove lid and add a generous handful of grated
jack cheese and cheddar cheese, spreading over the top. Leave on heat
until the cheese is melted. Serve with warmed, buttered rolls and big
glasses of iced tea. Or milk.

Kidney beans also work, but I prefer lima beans.
