3038.0. "Spicy Succotash" by ISLNDS::AREANO (Never a dull moment) Wed May 15 1991 17:48

This recipe is really simple, and can be modified very easily. If you
don't LOVE spicy food, modifications are needed!

Spiced succotash:

1/2 to 3/4 lb of ( I use either sausage,kielbase, or frankfurters)
one can whole kernel corn, drained
one can baked beans
BBQ sauce (the spicier the better)
fresh ground pepper
Lousiana Hot Sauce (Red Hot Sauce)
Red CHinese Peppers (optional)
Oregano
Parsley

Cook meat any way you prefer. When done, slice into 1/4" pieces.
Place in large skillet. Add corn and beans. Add 4-6 tbs BBQ sauce to mixture.
Add remaining ingrediants as you wish. I use 4-5 dashes hot sauce, roughly
one heaping tbs ground pepper, one tsp oregano, one tsb parsley. And I usually
use seeds from 2-3 of the small chinese peppers. Stir.

Cook on low-med heat for 15 minutes, stirring occasionally.

Goes great with a nice crusty bread!

Enjoy,
Paul
