3008.0. "Chinese Broccoli in Garlic Sauce" by TOOK::DUGAL (Lisa) Wed Apr 24 1991 14:20

A few months ago, I had Broccoli in Garlic Sauce at a chinese
restaurant. It was quite good but I can't seem to find a
recipe that comes close to it. Does anyone know how to make it?
Or can someone point me to a note where I might find what I'm
	looking for in?

	Thanks in advance.

This is how I'd make it:

    Ingredients:

1 head fresh Broccoli - cut into bit size pieces
1/3-1/2 cup Tamari or Soy sauce (I like to use low salt ones)
     1-2 tsp fresh grated ginger
4-8 cloves crushed garlic (I don't use a garlic press - instead I crush the
garlic between waxed papaer with a meat
tenderizer and then chop a little bit.)
     1-2 tbs sugar
     peanut oil
1/4 cup water with 1 tbs cornstarch for thickener (optional)
Crushed red pepper or chili paste to taste (optional)
     Steamed/boiled Rice

Add around 3 tbs peanut oil to wok/skillet. Make sure oil is quite hot
before you put the broccoli in. Make sure you have a spatula ready (I
like to use a wooden one). Saute broccoli in hot oil stirring contstantly.
Broccoli will turn bright green very quickly. Add garlic and ginger and
toss around for a few seconds. Be careful because garlic burns easily.
Broccoli should be kind of "crunchy", but heated through. Next add tamari
or soy sauce and heat til it simmers - you may want to turn the heat down
to med-med/high at this point. Then add cornstarch mixture a little at a
time while stirring - sauce will thicken as it simmers. Then add sugar to
    taste.

If sauce is too strong, add a little water to dilute.

    Serve over rice

    Bon Apetite!

    Simone

My methods of cooking have changed dramatically since marrying my
husband. Where I used to eat broccoli, spinach, etc., just steamed
with butter, salt and pepper... we now add a little more zest to those
    greens!

After steaming your broccoli or spinach... move it to a frying pan with
hot olive oil and cloves of sliced garlic and fry! Whoah!
