| Nope, don't think its a persimmon. My guess is that you soak it in
something, I wouldn't be surprised if its not cooked at all, but then
again it may be boiled. Will look in my cookbooks tonight. (never been
a fan of them myself)

| I've also bought them in the supermarket. I love them. They come in a
jar, but I have no idea what brands make them. They are usually right
next to the applesauce. They make a wonderful garnish, on top of some
lettuce. Go great with pork and lamb...

| Hmmm, it might be clove. I had the idea that they're made by pickling
apple slices in vinegar and cinnamon. The red color sure looks to be
added.

My mother-in-law makes them by slicing a cooking apple in about
quarter inch slices. Then puts them in a mixture of red cinnamon
candies, a little water, and I think a whole clove. Cook slowly, as
the candies will burn.
They always tasted fine. Yes, you can buy them in the grocerie
store, but I've never bought any.

| Sorry it took so long, here's the recipe for spiced apples taken without
permission from the New York Times Cookbook.
SPICED APPLES -- 6 pints
5 lbs (15 medium) firm apples 4 sticks cinnamon, broken into
6 cups sugar 1-inch pieces
2 cups white vinegar 2 teaspoons whole cloves
1. Peel, quarter and core the apples.
2. Combine the sugar, vinegar, cinnamon and cloves and heat to boiling.
Add the apples and boil gently, uncovered, until tender but not broken.
3. Pack into hot steril jars, filling to within one-quarter inch of the
top and making sure the syrup covers the fruit. Seal immediately.

| the apple rings are red because they are dyed red by food coloring...either
in the red cinnamon candies or by adding red food coloring to the cinnamon
and sugar syrup. As mentioned, they are available in the market.
