2943.0. "CAKE BATTER: How Long Will It Keep?" by CGVAX2::GALPIN () Mon Mar 04 1991 16:01

I hope someone can help me on this. My son's birthday is this
Friday (March 8). I plan on making cupcakes for a Thursday's party at
his sitter's house and a cake for Friday for the family party. Both of
these will be made out of the same batch (box mix). My question is:

How do I keep the batter for the cake only good? I want to only
make the cupcakes on Wednesday night and the cake on Thursday night so
that it will be fresh. There will be raw eggs in the batter so I don't
    want it to spoil.

         Thanks.

If you're making these from a box mix, can't you measure out half
or whatever portion of the mix you need for the cupcakes and just
    make those up separately?

One box mix doesn't have enough for cupcakes AND a cake. It's
either 12 (sometimes 6) cupcakes or one cake.

How about baking them at the same time, and freezing one? It stays
fresher that way, and you wouldn't have to bake twice.

    RE: .2

The type of mix I have makes 24 cupcakes or 2 8" cakes. So, I'll
be making 12 cupcakes and 1 8" cake.

         I'll follow .3 advice. Thanks.
