2931.0. "Hot & Spicy Peanut Sauce" by ERLANG::MINOTT () Mon Feb 25 1991 16:08

    Hi,

I searched this file for what I'm looking for but as far as I can tell
    it's not in here.

On Commonwealth Ave in Boston there are 2 Thai restaurants. They each
serve a salad with a spicey peanut butter dressing. Would any of you
    have this recipe?

    Thanks in advance.

2931.1I just bought some!LEZAH::SCANLONI was so much older then...Tue Feb 26 1991 08:227
Actually, I just bought a bottle of Thai Spicy Peanut Dressing
at Idylwilde Farms yesterday. I haven't tried it yet, so I
don't know how it tastes. If I think of it, though, I'll type
	in the list of ingredients.

	Take care,
	Tara

I'd like to repeat the original request... when sailing last summer a
guest (living in Mexico) mixed a jar of peanut butter with some "hot
sauce" that we munched with veggy sticks.. it was delicious.

Although I normally eschew packaged mixes, I have found the 'Taste
of Thai' line to be exceptionally good. They offer both a Spicy Peanut
Sauce, which is made by simmering the contents of the packet with
coconut milk, and a Thai Peanut Salad Dressing, which is made using
    water.

I have seen various items in this line at Victory Markets, Shop 'n Save,
Shaws, Idylwide Farms (Acton), and Duck Soup (Sudbury).

I suspect this is close to what you are looking for. It
uses an Indonesian sause called Kecap Manis (I think pronounced
like Ketchup, likely the basis for name of the US product).
We get this at a local Chinese/Import food store. there are several
    varieties, all quite different.

this is great as a dip for raw vegetables.

    Sambal Kacang (Peanut Dip)

1/2 cup Peanut Butter (prefer crunchy)
    1/4 cup Kecap Manis
    2 Tbs hot water
1 Tbs fresh lemon or lime juice
    1 tsp sugar
1 tsp crushed fresh or dried hot red Chili
    1 garlic clove

Combine PButter, Manis, hot water, juice, sugar, chili, and garlic
in Food Processor or blender and puree coarsely using on/off.
Transfer to serving bowl, cover, and refrigerate

Bring to Room Temp before serving
2931.5Chinese Noodles with Peanut SauceEOS::ARMSTRONGMon Nov 01 1993 09:3946
Here is one more, make as hot as you like

This is a delicious noodle/sauce dish served with a hot
    sauce to 'pour on'.

    Chinese Noodles wiht Peanut Sauce

    Noodles:
1 lb Chinese egg noodles or SOBA (we use SOBA)
    2 Tbs dark sesame oil

Boil noodles 2 minutes or according to directions. Shake to
drain. Put in bowl and add oil. Toss to coat. Cover and cool.

    Peanut Sauce:
1/4 cup Peanut Butter (smooth or chunky)
    2 Tbs peanut oil
    2 Tbs dark Sesame oil
    1/2 tsp salt
    4 tsp sugar
    2 Tbs Soy Sauce
    2 Tbs red wine vinegar
    1/4 cup cold water
    2 Tbs hot chili
    1 Tbs minced garlic

In large bowl, combine peanut butter and oil, stirring constantly
until smooth. Gradually stir in sesame oil, salt, sugar, soy,
vinegar, water, chili and garlic. Pour sauce on noodles, stirring
gently and taste for seasoning. Add more chili if preferred.
Cover and refrigerate for at least an hour.

    Soy-Vinegar Sauce
    1/4 cup dark Soy
    1/4 cup red wine vinegar
2 Tbs dark sesame oil or Hot Chili Sesame oil for HOT!
    2 tsp sugar

    mix...

    Garnish
scallions, radishes, grated carrots, peas, bean sprouts
    or julienne ham slices

Put noodles in casserole dish, garnish as desired, serve with
    soy-vinegar sauce
