| You could make lemon (or any other kind) marmalade. It keeps very
well. Or salt pickled lemons which I think are morroccan. I'll try
to remember to bring in the recipes tommorrow.

| if you need to save some:
juice as many lemons as you have left over (when they are real nice and ripe
is best) and pour the undiluted juice into an ice cube tray. Freeze. take
the cubes out of the tray and seal in a re-sealable freezer bag. Use to
flavor soups, desserts, etc. for months in the future.
You can also make grapfruit cubes....I like these added to fresh brewed
iced tea to add a little tang. They also can be used to make sorbet and
I add fresh grapfruit juice to fruit salad dressings.

| It's kinda rich but lemon meringue pie made with fresh lemons would
be a great way to "dispose" of some of those pesky unwanted lemons.
Fresh lemonade is great too, especially when the lemons are cheap/free.
My neighbors have trees which hang over into my yard which are a good
source of lemons for me. Now if limes would grow well out here I'd be
all set for those gin and tonics when the weather here warms up.

| Thanks for the great ideas, I would be interested in the marmalade
recipe, would you please post? I will probably use the ice cube tray
trick. Lemon merinage pie, hmm, wouldn't be a bad idea, might even be
worth breaking the diet for ;^)
