    This recipe was recently published by the owner of The East Coast
    Grille, reknowned for it's "Inner Beauty" hot sauce (~18K Scovilles)
    and "Pasta From Hell".
    
    I just made a batch and it's delicious!!
    
    *WARNING* Habenero or Scotch Bonnet peppers can cause LOTS of pain
    if you get the oils on any part of your body. I won't handle them
    without gloves, having learned the hard way.
    
    Actually, those with less masochistic tastes than I may wish to skip
    the peppers altogether. The sauce will still be tasty!!

                   "Incendiary Caribbean Hot Sauce"
    
    In a blender put...
    
    	o	Up to 15 Habenero or Scotch Bonnet Peppers
    	o	1 de-skinned and de-seeded mango
    	o	1.5 cups yellow mustard
    	o	1/4 cup brown sugar
    	o	1/4 cup white vinegar
    	o	1 tsp ea. cumin, curry, chili, salt, pepper

    The ICHS can be used as a base for lots of things. Monday I added
    some fresh scallions, basil and {mumble} and smeared the results
    on a boneless chicken breast. (Smear it with a spoon. DON'T TOUCH IT!)
    
    30 minutes later I had a delicious caribbean flavored spicy chicken...

    I always warn people not to touch anything with habeneros in it. Not
    because they'll burn their fingers or hands, but because the oils tend
    to stay on your hands without your realizing it. I once made the most
    painfull mistake of removing my contact lenses HOURS after handling
    the cut up peppers. Not a pleasant experience, to say the least. Whole,
    uncut habs are pretty safe to handle...

    I eat it with great pleasure!! If it bothers me at all, it only amounts
    to taking a glass of Alka Seltzer.

The "Scoville" is the measure for chili hotness, isn't it?  Just for comparison,
do you have the figure for jalapeno chilis?

Also, where in the Southern New Hampshire/Eastern Massachusetts area can one
get fresh habeneros or scotch bonnets?

BVW, a caution when cooking with this sauce or with Inner Beauty Hot Sauce--
be careful of the fumes as the dish cooks.  I got a lungful while grilling
some chicken and was coughing for days afterwards.

    Yeah, a Scoville is the indicator of "how hot". 
    
    Jalapenos typically run from 2500 to 5000, compared to 300,000 for
    the habeneros.
    
    The only place I've ever seen them for sale in MA., is at Idlewild
    Farms in {brain cramp, I forget the name of the town}, and that may
    have been seasonal. I still have a plant growing in my living room.
    
    ...good advise on the fumes.

    All of the tests I'm familiar with include the seeds as part of the
    test. Interestingly enough, I've seen some peppers rated hotter

I saw some a few weeks ago at Le Jardin in Cambridge (on Huron Ave.)
