| I assume we're talking about the bland toast you give to babies; at
least, that's what I always knew as zwieback. I've seen it in Shaw's in
the baby food aisle.
I'd assume it's used in your cheesecake recipe for part of the crust;
I've always just used 1 cup of graham cracker crumbs (available in a box
in the baking stuff and spices), 1/4 cup of brown sugar and 2 tablespoons
melted butter pressed into the bottom of a 9" springform pan.

Thanks for the info. The graham cracker crust sounds great and in
the back of my mind I'd been thinking graham cracker crust if I
couldn't find the zwieback. I'll have to review the recipe (Gourmet
Mag Jan 1991 - Katish's Cheesecake), and see if they add any flavoring
to the crust. If this comes out as yummy as it looks, I'll post the
recipe here.

I found zwiebeck under the MELBA toast section. Melba makes a
version of zwiebeck. I saw them at Shop n' Save in Raymond NH,

| Been making cheesecake for many years and use only the zwiebeck crumbs
cause I like the flavor and so does everyone else - in fact there is a
receipe for cheesecake on the box.

In response to .0, zwieback comes from the German "zwei", meaning 'two'
and "backen", meaning 'to bake'. Originally the term referred to
sweetened bread that was enriched with eggs, but in current German
(and I think US) usage, has come to refer to the bland rusk-like
biscuits usually given to children. The Germans also recommend
zwieback and chamomile tea to cure stomach upsets, so how come you
Americans put it in your cheesecake...?
