This is a great dish to make really quickly. I don't measure when I cook but I will try to approximate. Everything is season to taste. -- Nisha Spaghetti with Clams -------------------- 2 tablespoons butter 1 can (6 1/2 oz) of chopped or minced clams olive oil 2 garlic cloves ( I love garlic) 2 tablespoons basil 1 tablespoon oregano 1/2 cup white wine 1/2 teaspoon ground pepper 1/4 cup Parmesan cheese 2 tablespoons parsley Spaghetti Put water on for spaghetti. Cook normally. Melt butter in large skillet. Add enough olive oil to cover bottom of pan Add garlic, basil, oregano, pepper, entire can of clams (including liquid) and wine. Simmer while spaghetti is cooking. When spaghetti is ready, drain and add contents of skillet. Add cheese and parsley and serve immediately.

Nisha, just a little information. If you want it to "be" really italian than take away all the spices, except for parsley, but most of all take away the parmesan cheese as we never put the cheese on pasta with any kind of fish. Ciao Marinella |
