This one's simple but good: 3 cups milk 1/2 cup sugar 18 marshmallows 4 eggs 1/4 ts salt cinnamon or nutmeg powder Heat milk and marshmallows together till marshmallows are melted. Add beaten eggs, sugar and salt. Pour into pie shell and add cinnamon or nutmeg on top. Bake for 10 minutes at 400 deg F and then for 20 minutes at 350 deg F. | |||||

3 cups half-and-half 2/3 cup sugar 2 eggs and 3 egg yolks, beaten to thoroughly mix but not to add air 1 teaspoon vanilla 1/4 ts salt fresh grated nutmeg Mix the ingredients, except the nutmeg, with a wire whisk to blend well. Pour into 9" pie crust which has been sealed on the bottom by brushing well with egg white and allowing to dry before adding custard mixture. sprinkle liberally with fresh grated nutmeg. Bake for 15 minutes at 424 deg F and then for 20 minutes or so at 350 deg F. Pie is done when a knife blade inserted in the center comes out mostly clean. (I remove pie before it is completely done because it will continue to cook while cooling). |
