| I purchased a 10" T-Fal fry pan several months ago and am very pleased
with it. It is truly non-stick and washes beautifully. I intend to
purchase more pieces.

| I don't like most non-stick cookware, because it's usually not as heavy
as some other cookware, so doesn't cook as evenly, but of Silverstone,
T-Fal and a couple of others, I prefer T-Fal. It seems to be most
resistant to scratches, and is equally as slippery as any other surface.

| We started with the T-Fal, Wok, great item. Then we purchased a
complete set. This is a great set of cookware. It is well worth the
money. T-Fal has a great Non-stick surface and with a little care
should last a long time.

| I just bought a Scanpan saute pan. It has some sort of non-stick
coating but the good news is that you can use metal utensils without
worry about scratching. They even say that you can use a scouring pad
to clean it. We've only used it once, used a metal spatula and scrubed
it with a metal scouring pad just for yucks. Still looks good. Will
report back as we use it.
The only bad thing that I've noticed so far is the price, the 9 inch
covered pan was around $65.

| The coating isn't teflon and it isn't silverstone. The USENET cooking
group was raving about it a little while ago, that's the reason that I
bought the pan.
Anyway, I got the pan at Jordan Marsh...

P.S. Has T-Fal been around for a while (yrs)? They claim to be the
first to invent the non-stick polytetrafluoro-ethylene (PTFE) surface.
They are from France if that means anything. I love the adjustable
handles to release steam if needed idea.

We bought my mom a few Scanpan items. She loves them... we were
originally thinking about getting Calphalon, but liked the
Scanpan because the handles don't get hot (you have to get
leather handle covers for Calphalon).

| Just a line from Europe; Tefal (as we call it) has been on the market
for zillions of years. I've got two frying pans with a non stick
surface and they are (as the Scots say) pure dead brilliant!!!!

| Well, everything that we have fried or sauted we've done in the
Scanpan. Everytime we've used metal spatula's when a spatula was
needed. Cleanup has been very easy. I even fried some mochi (sticky
rice paste) in the pan without oil and it didn't stick. The finish
looks the same as when I bought it. If the coating was teflon or
siverstone it would be scratched by now.
Besides the non-stick cooking the pan is nice because it has a plastic
handle, no need for pot-holders. I've also noticed that the pan isn't
as heavy as Calphalon, but that the bottom is about the same thickness.
It looks like they removed some of the metal in the sides of the pan
but kept the bottom thick.
I think that our Christmas gift to ourselves will be a larger saute
pan, and a few sauce pans. It is expensive, but appears to be worth it.

| First, the evidence relating Alzheimer's and aluminum is weak.
Aluminum was found in the brains of Alzheimer's patients, but (last I
heard) nobody knows if it's a cause or effect of the disease, and if a
cause, if dietary aluminum has any relation. Research is still in
progress. The advice to avoid aluminum is just a reasonable caution.
It's mostly a problem when cooking acid foods, which react with the
aluminum and give the food a lousy taste. That would be enough reason
to avoid it.
Second, yes, T-Fal is a non-stick coating on aluminum cookware, but
it's a PTFE (like Teflon), and reacts with just about nothing. The
only way any aluminum would get into your food is if the pan were
really badly scratched. Most people throw away pans long before they
get that scratched.

The aluminum concentration in brains of dead Alzheimer's victims is thought to
be statistically higher than normal. This hasn't been established for sure.
For one thing, people don't go around doing detailed chemical analyses of
the brains of those who die from "normal" causes, so the baseline against
which this judgement is based is on shaky ground to start with. Secondly,
it's not clear whether the elevated aluminum level is cause or effect--do
people get Alzheimer's because of elevated aluminum levels, or do people get
elevated aluminum levels because of Alzheimer's? Nobody knows the answers.
Indeed this is something that one should be prudent, but not alarmist, about,
until further study results appear.

| I recently saw an ad in a magazine about a new line of T-fal cookware called
"Paris". The ad stated that "Paris" is to be their top-of-the-line cookware.
My question is whether anyone has seen the Paris line in the stores. I have
checked at Lechmere in Nashua, and they do not have it in stock as yet, and I'd
like to check it out and compare it to their existing cookware lines. If you
have any information as to where I could find this cookware in Southern NH/Mass.
please let me know. The previous replies have just about convinced me that
I should buy a set of T-fal, so now the issue is what line to buy! Lechmere
carried the "Versailles" line and one other (I can't remember the name). Are
there any significant differences between the lines, or is it just personal
preference based on price, appearance, etc.
Any help would be greatly appreciated! Thanks...

| I've seen various "flavors" of T-fal: Ultrabase, Excellence, and
Verasille (sp?) are among the offerings. Could someone explain the
pecking order of these series.

| I think you got it, inadvertently! I think Ultrabase is the standard
(not positive, though), Exellence is one level up, supposedly (that's
what I have), and Versaille is the top of the line (or was the top;
they may have more now).
I like it, but it's not my favorite cookware. It's good for every day
quick cooking. I've been happy with it.
