| This isn't exactly a recipe but...
Peel turnips and slice into chunks about the size of ice cubes (about
1-2" square). Place in a pot of water and bring to a boil. Simmer until
tender, about 30-45 min. Drain and mash as you would potatoes, adding
salt, pepper and butter (if desired).
Other than the above which you probably knew, we use them in stews
along with the usual stuff, and bake them with cheese after mashing
them. I hope someone out there has more ideas 'cause I love em too!

I HAVE A RECIPE WHICH CALLS FOR THEM TO BE STEAMED UNTIL TENDER, THEN
MIXED WITH FRESH BEETROOT SIMILARLY TREATED - NOT REAL BAD WITH A DASH
OF SOUR CREAM
ANOTHER IS TO PEEL THEM, CUT INTO CHUNKS, STEAM UNTILJUST TENDER THEN
PUT THEM IN A PAN WITH MELTED BUTTER AND A LITTLE SUGAR TO GLAZE THEM.
WHEN ALL ELSE FAILS, WE USE THEM FOR CATTLE FODDER. HORSES LOVE THEM.

| peel and boil turnip, also boil abour 4 potatoes, mash all together
with butter, add 1 slightly beaten egg and a little nutmeg. Put all in
a casserole dish, top with bread crumbs and pats of butter and bake in
350 oven for about 20 minutes. Very good and different.

| Combine left-over mashed potato and turnip with egg, onion,
salt, & pepper - form into "pancakes" and fry in pan just
as you would a regular pancake (but "batter" will be a bit
stiffer).
Left-overs....what would we do without them?

| I mash my turnip with Carrots and a little butter. You can also
sprinkle the top with a tiny bit of cinnamon. I'll be making this for
Thanksgiving.

| The way I like turnip the best is the way my Mom does it for
Thanksgiving every year and it's very simple.
Use equal parts turnip and carrots boiled together and mashed with
butter and salt and pepper.
(I can't wait till Thursday!!)

| The way we cook them in germany is: Melt a TB butter or margarine
ina pan, add about 2TB sugar. Let carmelize then add 4 -5 slivered
*white* turnips, a hint of salt, let them sweat a 'till slightly
tender. Dust with a spoon full of flour, let this cook just a little
longer. Pour into this heated stock, just to barely cover. Stir
bring to boil, cover pot and let simmer for about 5 min.
I believe that this could be done with yellow turnips also. My mother
did not like the yellow turnip, so she never made them. Pitty!!!!!!

| Anybody know of, or can help me devise, a recipe for a layered
casserole of turnip, onions, and potatoes? I saw one where they were
mashed together and baked in a casserole, but that isn't what I'm
looking for. Something with more texture and seapration of
ingredients. Would an au gratin potato recipe work by simply adding
some turnip layers? I've never really cooked turnip before, so I don't
know if it will exude too much water.
Any other spice/herbs accompaniements for turnip? Dad planted a ton of
it, and I'm anticipating new recipes to use it up : )
