Beat flour mixture into butter mixture along with 1 cup of thick
applesauce (I presume they used homemade stuff in those days).

quick and easy cream cheese frosting
3 oz cream cheese softened at room temp
1/2 stick butter softened at room temperature
1 teaspoon vanilla
powdered sugar
cream cheese and butter together until fluffy with mixer.
add vanilla and beat well. Add powdered sugar, 1/2 cup at a time
and mixing with mixer, until the frosting is of spreading
consistency...usually 3 cups or so.
this will frost a cake. For a large cake, use 8 oz cheese
and 1 stick butter, 2 teaspoons vanilla, and approx. 4.5 - 5
cups sugar.
optional - add pecan chunks or walnut chunks.
keep refrigerated.

| additional note to cream cheese frosting:
if it is too thick, add drops of milk or cream to thin it..if it is too thin,
FIRST, chill it well and see it that helps (30 - 45 minutes in the freezer).
If still too thin, add powdered sugar.

| Not sure what apple sauce cake is but I make Eve's pudding like this:
4oz butter
4oz sugar
4oz self raising flour
2 eggs
1 tspn cinnamon
1 tspn mixed spice
couple of apples (Bramleys are best)
Cream butter/sugar, beat in eggs one by one, fold in flour/spice. Roughly
chop apples, place in shallow Pyrex dish. Cover with cake mixture. Bake
180 C for 25-30 mins. Lovely eaten hot with custard or cold.
