2655.0. "APPETIZER: Broccoli Balls" by FDCV07::PROUTY () Fri Oct 05 1990 14:05

    
    2 packages of chopped brocolli, thawed and uncooked
    2 cups Pepperidge Farm Herbed Stuffing
    1 cup Parmesan Cheese
    6 eggs slightly beaten
    3/4 cups soft butter 
    
    Mix eggs and stuffing.  Drain brocolli well and squeeze between 
    paper towels.  Add to eggs and stuffing.  Add remaining ingredients
    with hands.  Roll into balls and freeze until use.
    
    Place frozen balls on cookie sheet and bake at 350 degrees for 
    20-25 minutes.
    
    This appetizer is sure to bring a round of praise!

    Yes, it is really 6 eggs.  I was surprised myself.  But that's what
    you need.  They are truely delicious.

    My mother in law makes this recipe exactly as above, but instead of
    using broccoli, she uses spinach.....DELICIOUS

I made these over the weekend, and they went over well.  Though I expected
the balls to come out firmer than they did.  I had figured they'd be 
consumable with fingers, but they really required a fork to eat.

Have others had the same experience?

    I made these 2 weekends ago.  They were a big hit.  The consistancy of
    the unbaked mixture was too sticky to use a meatballer thingy, but
    once baked, they were fine.  I added to the dish by adding melted
    cheddar cheese sauce and tomatoe sauce for dipping.

Mine came out really buttery.  Is it really 3/4 cup of butter, as in 1 1/2
sticks?

(They tasted good, but I wonder if the quantity of butter is what made
them so fragile)
