    I just purchased on sale six large containers of strawberries.  I would
    like to freeze some of them and possibly make jam/jelly with the rest.
    
    Does anyone know how the strawberries have to processed before being
    frozen?

    Freeze them on baking sheets or similar and then bag/box them - they
    seem to accumulate less frost this way. Commercially, they're blast
    frozen.
    
    Home-frozen strawberries are fine for jam, although you may need to
    adjust for the water that comes out when they thaw.
    
    They go very mushy when thawed, so aren't very good for anything where
    they're used decoratively, but are fine for g�teaux, tarts, etc.
    
    Take a few from the freezer the night before and add to natural
    yoghurt.  Makes a good breakfast in the winter.

    Wash, leave to drain THOROUGHLY before freezing.

Berries can also be washed, drained, sliced, and sugared.  Let sit for a few
hours in the fridge.  Freeze berries in juice in small containers or freezer
bags.  Use partially defrosted in desserts or use as a base to make syrup
for ice cream and/or pancakes.

Another use for plain frozen berries:

toss a handful of the frozen berries into the blender with some non-fat milk,
a teaspoon of vanilla, and sweetener of choice to taste.  Blend until nice and
thick -- a very satisfying strawberry shake for very little calories.  I
add the frozen berries to Ultra Slim Fast shakes (skim milk) for breakfast to
add a little extra substance and get me through the morning.  The calorie
addition is approx. 40 - 60 calories.
