Ooops, that's a good one. We never succeeded in finding "Graham Crackers" in France, so we came up with some acceptable substitutes. Graham Crackers are a sweet biscuit made with sugar and/or honey and graham flour (and I don't actually know what that is). They're light brown in color, and have a particular taste which makes for a nice pie crust. Since it's difficult (maybe impossible) to find them in Europe, you can substitute various other sweet biscuits (cookies). One which we found to work well was a "plain" biscuit made by Lu. I forget now what they were called. The result doesn't taste exactly like graham cracker pie crust, but is still quite good, and doesn't harm the recipe in any way. | |||||

Being from the US and currently living in the UK, it hasn't been easy finding the same ingredients. I have been told that graham crakers in the UK are digestive biscuits (simple, plain biscuits) but I have seen graham flour listed in the ingredients. I've used plain shortbread biscuits and it comes out close enough but a little harder crust making it more difficult to cut easily. Hope this helps wherever you are Ian!! |
