BAKED SCALLOPS WITH GARLIC BUTTER 1-1/2 LBS. SCALLOPS 3 CLOVES GARLIC - MASHED 1/2 STICK BUTTER OR MARGARINE - MELTED 10 MUSHROOMS - SLICED LIGHT DASH ONION SALT DASH PEPPER 1/3 CUP SEASONED BREAD CRUMBS 1 TBLSP. MINCED FRESH PARSLEY Rinse and wipe scallops with paper towel. Mash garlic and add to butter. Stir well and keep warm. Pour a little melted garlic butter in bottom of baking dish. Add mushrooms and season. Place scallops on top of mushrooms. Reserve 1 Tblsp. butter, dribble the rest over the scallops. Sprinkle with bread crumbs and parsley and then put reserved butter on top. Bake at 375 til brown and bubbly.

I make a scallop casserole that isn't to bad. 2 lbs Scallops ( I use the big sea scallops & half them if they are to big) 1 pint of heavy all purpose creme 1/4 teap. pepper 1/4 teap. celery salt 1/2 teap. Worch. Sauce 6-8 tabl. of flour 1 stick of real butter 10-12 Ritz crackers. First melt the butter and add spices and Worch. Sauce and saute scallops for about 10 minutes. Add flour and mix well with scallops, then add warm creme and cook until it thickens ( like a basic white sauce). Pour in a casserole dish and top with crushed and buttered Ritz crackers and bake at 325 degrees for 30 minutes. serves 4. |
