two fast ideas for using fresh veggies: I NEVER have too many green tomatoes....I slice them thick, dip in beaten egg and then in a mixture of equal parts flour and cornmeal, seasoned with white pepper and salt. Lay flat on a plate and chill for 30 minutes to allow the coating to set. Fry in olive oil over medium hot flame until browned. Drain on paper towel. Serve immediately in place of french fries or fried onions. For serving fresh zuchini or other tasty summer squash: cut squash into matchsticks slice fresh mushrooms thin (any flavor you like) saute the mushrooms and squash in good quality olive oil. toss with hot, cooked pasta. Add 1/4 cup fresh grated parmesan cheese (or romano if you choose). Serve with a generous topping of black pepper.

I prepare a dish much like that (squash) but I add scallops and/or shrimp, a couple of jiggers of vermouth or a splash or two of good quality white wine, a clove of garlic, and a sprig of fresh thyme or basil (chopped). Saute that with the squash, mushrooms and good qualtiy olive oil and you have an elegant dish that's quick and very easy. You could add a little lemon juice if you'd like but the vermouth/wine is all that's needed for me to 'salt' the dish. Some freshly ground pepper (I add juniper berries to the black peppercorns sometimes, depending on the dish) and Voola!! It looks like a great dish for tonight!!! /g. |
