2528.0. "PICNIC: At the Beach" by ASABET::C_AQUILIA () Tue Jul 24 1990 09:20

help! scenario...

you were going on vacation and can't check in to your hotel till
the afternoon. you decide to spend your extra time on the beach
before checking in.

what kind of food would you bring for lunch? i guess what i'm asking is
.. you have a small cooler and a ride of about 5 hours before you get
to the beach. the stuff should be ok. in the cooler but what would you
bring for contents to make a nice afternoon at the beach?

comments and suggestions will be greatly appreciated. thanks a million!

Take fried or barbequed chicken. That carries well. Don't forget the
    napkins tho.

Also you can fixed deviled eggs but cut them the opposite way from what
you normally do and you can carry them in the egg carton. If you keep
them in a cooler, they will be all right.

I know you'll all groan but we have fancy picnics. Sometimes we take
cold soup in the two quart bottles juice comes in and serve it in
plastic cocktail glasses. My favorite is gazpacho but cucumber is
    good too.

Another good dish is cucumbers in sour cream, vinegar, sugar, salt
dressing. Also just plain cut up veggies. Cookies for dessert.

One of my favorites to take anywhere for a picnic
when a grill is not a available/allowed is Steak Salad.

The night before bar-b-q a steak (the amount that
you would normally eat). Let it cool and then
cube the steak. Marinate in Rosenburgs Italian
dressing, virgin olive oil, onions, mushrooms and
    cherry tomatoes overnight.

The next day serve on a leaf of romaine lettuce, with
some french bread and red wine.

Will post the recipe with the actual amounts if
    anyone is interested.

When on the beach, I like to have several little snacks, and not
    a big meal. Therefore.......
The night before, I freeze a half dozen of the 8 oz. boxes of fruit
juices. That keeps the little cooler cold.
Then I pop the frozen juices, a bunch of yogurts, bananas, PB+J's,
etc etc etc into the cooler. Don't forget spoons!!

After arriving at the beach, take a few of the frozen drinks out
to thaw. It takes forever, it seems.

Chips and salsa are nice on the beach too.

    Hello,

writing from Italy I can only suggest something made with PASTA.

The evening before going to the beach you can cook some "maccheroni"
(I believe you call them macaroni) and then add:

Fresh ripe tomatoes cut in small pieces
    Fresh basil
    Olive oil

This will be enough, but you can add also:

    Capers
    Mozzarella cheese
    Tuna fish

This pasta is very good when you eat it cold and it takes no time
    to be made.

    Hope you like it.

Another great idea fo rthe beach is fruit salad in a plastic bag.

I cut up all the different fresh fruits I can find and put the pieces
in one or two plastic bags then seal the bags with a twist tie. The
bag is easy because if you've eaten half of the salad you simply seal
the bag down tighter -- makes more room in the cooler. When you're
done you just throw out the bag.

Another twist on this (especially with children) is to serve this in
little dixie cups and let them eat with toothpicks. It's fun for them
and they don't get sand in what they're eating
