Buy good quality, large FLOUR TORTILLAS. Making them is not worth the
hassle unless you have a real desire to be authentic....with all the
other stuff on them, noone will be able to taste the difference - if
there is any.

Mexican Pizza!! A favorite of mine. I use TWO flour tortillas
about 8 inches in diameter. One pizza serves one person (if you
love Mexican pizza like my fiance and I do.
My recipe for Mexican Pizza, and a recipe for Guacamole follows.
Please excuse the VAX Document tags. If you want
to compile it, type the following at the DCL $ prompt:

<P>Tortilla crust : Preheat oven to 375 degrees. Lightly brush tortillas with
oil and prick in several places with a fork. Bake directly on oven rack for
about 5 minutes. Allow 2 tortillas per pizza.
<P>Meat topping : Brown <math>(1<over>(4)) lb hamburger (per pizza), 2 T
chopped onion (per pizza), <math>(3<over>(4)) tsp chili powder, salt and
pepper to taste (per pizza). Can also throw in green chile peppers.
<P>Spread taco sauce or spaghetti sauce thinly between tortillas and place
one on top of the other. More sauce on top. Spread with meat topping. Top with
chopped tomatoes, scallions, hot red peppers, hot green peppers. Top with
combination of Monterey Jack cheese and Cheddar cheese. Heat through. Slice
and top each slice with guacamole and sour cream.

<LE>2 T lemon juice
<LE>1 T onion juice
<LE>1 clove garlic, crushed

<LE>1 T chopped canned green chiles

<P>Cut avocados in half and remove seeds. Peel. Blend smooth in electric
blender. Add remaining ingredients blending well. Chill.
<P>Can substitute onion powder or freshly minced onion for onion juice, and
garlic powder for garlic clove. For a more spicy guacamole add more chopped
green chiles and hot pepper sauce.

I forgot to mention, this recipe changes all the time. Sometimes
I use taco seasoning mix in the hamburg (added to taste). I usually
just use sweet green peppers and canned green chile peppers, and
I often add them directly to the hamburg mixture while cooking it,
rather than throw it on top afterwards. You just kinda wing it, just
like any other pizza. For the sauce... be sure that you do not
get a chunky sauce... it doesn't work so well when spreading it
between two tortillas. And for the tortillas... if you overcook
them, they will be a bit stiff and warped but don't let this worry
you since once you add all the fixings and stick the whole pizza in
the oven, the tortillas soften up again somewhat (that's why you
want to precook them.. so they don't get too soggy).

| Lazy man's Mexican pizza (but still yummy!):
6 english muffins, halfed
1 lg. jar salsa (I like hot)
8 o�z. shredded Monterey Jack
1 lg. onion
2 chili peppers
red chili powder
fresh pepper
sour cream
cut muffins in half - top with salsa. Add chopped onions, chopped peppers,
cheese, chili powder and pepper to taste. Sprinkle olive oil on top.
Bake at 350 for 16-18 minutes. Top withsour cream and serve!
Also goes great with meat! Make hamburger or ground turkey with taco mix,
cook, and add to pizzas.
