    I am looking for a recipe that calls for boneless breast of chicken
    stuffed with crabmeat mixture.  I think one of the ingredients in the
    stuffing is cream cheese as well.  Does anyone have a "rendition" of
    this recipe?

    Note 401.2 is a recipe for Cornish Hens stuffed with a Crabmeat
    stuffing.  This is an excellent recipe.  You could double the stuffing
    recipe to fill a chicken.

    Here is a FABULOUS recipe that I think you will find easy to make and
    tastes wonderful.
    
                          ELEGAN CHICKEN
    
    6 chicken breasts (boneless)
    1 1/2 sticks butter
    2 containers heavy whipping cream (8 oz. size)
    2 cans REAL crabmeat
    1 Tablespoon tarragon
    2 Tablespoons flour
    1/4 cup lemon juice
    salt and pepper
    
    Pound breasts flat and spread out on a board or waxed paper.
    In a baking dish melt 1 stick butter - add lemon juice and roll chicken
    breasts to coat.  Sprinkle with salt and pepper.  Bake in a 350 over
    for 10 minutes.  While that is in the oven - prepare sauce by melting
    the other 1/2 stick butter, drain crabmeat and add to butter.  Sprinkle
    in flour, tarragon and salt and pepper to make a paste.  Add cream,
    blend and let simmer until it thickens.  Take chicken out of over and 
    pour mixture over the chicken and put back in the oven for another 1/2 
    hour.
    
    Serves 6-8
    
    Suggest serving with rice pilaf, Caesar salad, and steamed spinach.
