Does anybody have a recipe for duxell's SP ? The one I have and tried, called for, in my opinion, to large of an amount of shallots. Something like 1 cup minced shallots and one cup of onions to a pound of minced mushrooms. The taste of shallots was overwhelming to me. Perhaps I'm just not used to the taste of shallots. The recipe I'm using them for, is a tenderloin roast recipe. With the price of tenderloin, I'd better be right about making the duxell's. Anyway, I'm looking to see what other's have tried and found to be good. Thanks Jim

Duxelles -------- Chop 1.5 lbs of mushrooms very finely. Melt 4 ounces of butter in a heavy skillet. Add 1 clove of garlic finely chopped and 2 finely chopped shallots. Add the mushrooms and let them saute' very slightly. Add more butter if necessary until they cook down and turn dark. Sprinkle with 2 tablespoons flour and let them cook down more. Store in refrigerator. Duxelles are good on grilled tomatoes as well as with meat. With the tomatoes it's good to augment them with a small quantity of bread crumbs.
