Cherry Nut Bread (Yields one loaf)
2 cups all-purpose flour
1 teaspoon soda
1/2 teaspoon salt
1/2 cup butter or margarine, softened
3/4 cup granulated sugar
2 eggs
1 cup buttermilk
1 teaspoon vanilla extract
1 cup chopped walnuts
3/4 cup maraschino cherries, drained and chopped
Preheat oven to 350 F. Grease a 9X5X3-inch loaf pan.
Sift flour, soda and salt. In a large mixing bowl,
cream butter and sugar for one minute. Add eggs and
continue beating until well-blended, scraping sides of
bowl as necessary. Alternately add flour mixture and
buttermilk and continue mixing until well blended.
Scrape sides of bowl as necessary. Add vanilla,
walnuts, and maraschino cherries. Mix until thoroughly
combined, and pour batter into prepared loaf pan. Bake
for 60-70 minutes. Allow to cool in pan for 10 minutes.
Remove from pan and place on wire rack. Serve warm or
cool.
