| Well, I havent made this in about 4 years, and when I did make it
I didnt have a recipe with specific measurements, etc but to the
best of my knowledge this is how I did it...
In a large pot add 4 pigs feet (I used a pressure cooker)
Add water (about 3/4 full)
add about 3/4 cup vinegar, 1 tsp pepper and little salt
Then throw in about 1 cup sliced onions and about 3 bay leaves
Bring all to boil until meat starts to fall off bone
Then pour into pans and refrigerate
water mixture will turn into a jell which is tasty
And to the best of my knowledge, thats how I made pigs feet

| re, adding them to pea soup.....werent those SMOKED ham hocks? I
wouldnt think they were raw pigs feet....unless it takes hours of
cooking to do pea soup...

Yup, them's wuz raw! My Mom would simmer the soup all day with the
pig's feet in 'em and take 'em out just before servin' up the soup.
After soup came pig's feet. I loved to smear mustard all over them --
minus the fat skin that enveloped them though.

| We used to put them into cabbage and sauerkraut soup, also pickle
them. Let me check out some of my old recipies, and see what I
can turn up.

| If you have a smoker, soak them in a marinade of equal parts rice wine
vinegar and fresh squeezed lemon juice, several garlic cloves (pressed
or smashed), and lots of fresh ground pepper for several hours and then
remove from marinade and smoke for a LOOOOONG time. They can then be
used in soups or stews or beans, etc.
Or you can just eat 'em....they're good.

| TRY THIS ON THE B-B-Q
BOIL UP THE FEET IN THE NORMAL WAY. ONCE THE MEET IS STARTING TO DROP
OFF THE BONE, REMOVE THE FEET AND BONE THEM.
ADD THE MEET AND SKIN TO THE FOLLOWING MARINADE. (SUITABLE FOR ONE
POUND OF MEAT)
5TBS OF OLIVE OIL
2 CLOVES OF GARLIC
1 tsp OF FRESH PARSLEY
JUICE OF ONE LEMON.
MARINADE FOR 1 HR MIN.
ROLL THE MARINATED MEET IN BREAD CRUMBS AND PRESS HARD SO IT STICKS.
PLACE THE MEAT ON A B-B-Q FOR ABOUT FIFTEEN MINITES EACH SIDE OR UNTIL
THE SKIN IS CRISPY.
EAT AND ENJOY WITH VARIOUS MUSTARDS AND A TIPPLE OF YOUR CHOICE
