Vegetable cooking spray (such as PAM)
1 tsp. mararine
1 cup chopped celery
1/4 cup chopped chives
1 cup hot cooked long-grain rice (cooked without salt or fat)
1 cup hot cooked brown rice (cooked without salt or fat)
1 16-oz can unsweetened peach slices, chopped & drained
1/4 tsp. salt
1/4 tsp. curry powder
1/4 tsp. ground ginger
Coat a large nonstick skillet with cooking spray; add margarine and
place over medium-high heat until hot.
Add chopped celery and chopped chives; saute until vegetables are
tender.
Stir in long-grain rice, brown rice, chopped peaches, salt, curry
powder, and ground ginger.
When ready to serve, microwave until thoroughly heated.
Transfer rice mixture to serving dish and garnish with fresh parsley,
if desired.
Serves 5-6 people
I made this as a side dish for company and it was a great hit.
