    I've tried the struedel recipes and a dir/title=cheese, and can't find
    anything.  I'd like to make a struedel with cherry and cheese (ricotta
    and cream cheese???).  Does anybody have a recipe, or can you give me
    your best guess based on your culinary expertise on how to proceed? I'm
    starting with frozen puff pastry, from that point on I'm stuck. I can
    figure out the canned cherries : ), but how to proceed with the cheese
    filling? And how long to bake?  If no recipe exists, let's make one!
    I guess it would be a like the filling for cheese danish...

The April _Cook's_ has an article entitled 'Strudel made easy' and uses fillo
dough, overlapped to form a huge sheet.  Recipes for dinner and dessert, large
and small strudels are given.

For future reference:

		BASIC SWEET CHEESE FILLING

	1 8 oz. pkg cream cheese (or neufchatel cheese)
	6 Tablespoons softened butter
	1/3 cup sugar
	1 teaspoon vanilla
	2 ex. large eggs
	2 tablespoons flour

Cream cheese and butter together.  Add sugar and mix well.
Add eggs and mix well.  Add flour and mix well.  Stir in
vanilla. 

Use as a cheese topping for danish, cheese base for fruit/cheese strudel.
