    I did a search in this notesfile for a good recipe for lemon
    squares and was surprised not to find even one.  I sure would
    appreciate anyone sharing their favorite recipe for these good
    old party standbyes.

	This is one of my family's favorite treats, and easy too -- my kids
	have been making these squares since they were in grammar school.
    
    
			Lemon Squares

1 cup flour                           2 eggs
1/2 cup margarine                     1/4 cup lemon juice
1/4 tsp salt                          1/2 tsp baking powder
1 cup sugar, divided                  1/4 tsp lemon extract

	Combine flour, margarine, salt, and 1/4 cup of sugar; press into a
lightly greased 8-inch square pan.  Bake at 350 deg. F for 20 minutes. 
	While the crust is baking, combine the remaining ingredients in a small
bowl.  When the crust is set and golden brown, pour the contents of the bowl
over the crust.  Return the pan to the oven and bake at 350 deg. F for 25
minutes. 
	Allow the pan to cool for 15 minutes, then cut the squares with a
sharp knife.  Let the squares cool completely before serving.
	Yield:  9-12 bars.  (You could get 16 squares but they would be very
small.)
	Variation:  You can double this recipe and bake in a 9x13-inch pan,
with no change in oven temperature or baking time.  The squares will be a
little thicker.

    I finally remembered to bring in this recipe.  These are great and
    so easy to make.  
    
    			     FILLED SQUARES
    
    Mix together:   1 1/2 cups shortening
    		    4 eggs
    		    2 teaspoons vanilla

          Add to:   4 cups of flour
    	  	    2 cups of sugar
    	 	    2 teaspoons of baking powder
    		    1 teaspoon of salt
    
    Mix well by hand.  Press a little more than half of the batter in
    a greased pan.  (I use the big rectangle Pyrex glass dish).  Spread
    filling (blueberry, lemon, apple, etc..).  Make small balls with
    the rest of the batter.  Flatten in hands.  Lay them on top of the
    filling.  Sprinkle lightly with cinnamon and sugar (optional). 
    Bake at 350 degrees for 40-50 minutes.  Let cool before cutting.
    
    Notes:  I buy the Comstock pie filling and use about 3/4 of the
    	    can.  After you flatten the remainder of the dough and
    	    place it on top of the filling, spread them out a little
    	    because when this cooks it will join together.

    Mix together:
          2 C flour
          1/2 C powdered sugar
          1 C butter
    Spread in 9 x 15" pan and press down with your hand so it
    compresses.  Bake at 350 for 20 minutes.
    
    Mix together:
          2 C sugar
          4 T flour
          1 t baking powder
          salt
    
    Blend with beater:
          4 eggs
          juice of 2 lemons
          grated lemon rind, small amount
    gradually adding the sugar, flour, baking powder & salt mixture
    
    Pour the liquid over the baked crust, bake for 25 minutes at 350.
    Sift powdered sugar over top when taken from oven. 
    
         4 T flour

    Perhaps we should explain why and how Charoset is linked to Passover.

    According to the Jewish tradition, Passover is the celebration of the
    deliverance of the children of Israel from slavery in Egypt.

    The slaves had to prepare mud bricks to build for Paroh.

    The ritual of Passover today, includes Charoset, a kind of paste, 
    made of grated apples (which turn brown), dates, etc., which ressemble
    the mud our ancestors used to build the cities for Paroh.
