Does anyone have a recipe for garlic spareribs? It's one of my favorite
dishes when I go out for Chinese food. I've searched this notes file but
only found barbecue and mustard-glaze spareribs.

    On page 105 of Jeff Smith's, *The Frugal Gourmet Cooks Three Ancient
    Cuisines*, he has a recipe for "Spareribs with Black Beans and Pepper
    Sauce."  This has, amongst its ingredients, 3 cloves of garlic.
    
    On the following page, he has "Garlic Ribs with Green Pepper and
    Black Beans."  However, in this version he says, "Use the same recipe
    as above but omit the garlic and red chili paste and add 1/2 green
    sweet bell pepper, cored and diced into 1/2 inch pieces.  Add the
    pepper just before steaming the dish."
    
    Remove the garlic and call it garlic ribs???  Beats me!
    
    If you want the Jeff Smith recipe but can't find a copy of the book,
    let me know and I'll get p. 105 to you somehow.

    Oh yeah, I went thru all my Chinese, wok, etc. cookbooks but this one
    is the only one which seems to come close to what you want -- AND which
    is close to the Garlic Ribs I've had at better Chinese restaurants.
    
    ...and speaking of garlic, one of the local Chinese restaurants
    (Hunan & Szechuan Cuisine) features "Egg Plant w. Garlic Sauce" --
    and it is exquisite.  Anyone know how to make it?
