I'm now living here in jolly old England and cannot find
pre-mixed seasoned bread crumbs. I normally use the Progresso
Italian crumbs for breading chicken or veal for parmesan, etc. Does
anyone have a "recipe" that they use to make their own?
Note 1857(?) had a recipe that I will try to duplicate - I obviously
cannot get all of the exact ingredients here. There are plenty of herds
and spices here but nothing comes "premixed" so don't include
ingredients like Lawry's Seasoned Salt because I will need the
break down of that. I'd like to make volume and keep it in storage.
Thanks in advance.

Try a mixture of crumbs, parmasean cheese, oregano, thyme, sage, basil, paprika, and dry mustard. Use about 1/4 tsp of each spice, about 1-2 cups crumbs, and 1/4 cup cheese. The amount of crumbs determine the spiciness of the mix. The paprika gives it a nice color, and the mustard adds a bit of zing (I add this to seasoned crumbs to improve the flavor). | |||||
