    Does anyone have a good recipe for a nut roast?  I can always make
    something up, but a really good recipe would be nicer.
    
    I'd *rather* have it in ounces or grams, not cups, but I'm sure I can
    work it out if I have to, with some of the clues given in the notes on
    equivalent measures!
    
    Oh yes, and I need it for Friday evening (European time!!)....
    
    Can anyone please help?

    Blast from the past.  A 60's recipe for veggie burgers or sloppy
    joe that's really good and surprisingly beef-like.  This is vintage
    Cambridge, Mass. (All amounts approx.  Never wrote this one down.)
    
    In blender grind up about 1/2 pound walnuts. Then grind up 1/4 to
    1/2 pound whole wheat bread. (Stale is better.)  Then coarsely grind
    or chop 1/2 green pepper.  Dump all in large bowl as you grind them.
    
    In blender put 2 eggs, worcestershire sauce, salt & pepper.  Blend
    and pour over other stuff.  Mix it all up and form patties to cook
    in a bit of oil.  Serve with ketchup.
    
    Or cook in a mass in a bit of oil, breaking up chunks as it cooks.
    Add tomato-based sloppy joe sauce and simmer.
    
    Best suggestion yet - tell me where that tree is.  I'll help you
    harvest them!  Never at a loss for ideas.

    OK, HERE GOES:
    
    Layered Cashew and Mushroom (or Spinach) Roast
    ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
    
    Serves 4-6
    
    1 tblspn oil
    1 small onion, finely chopped
    2 cloves of garlic, crushed (optional)
    225g/8oz cashew nuts (or use half cashews/half almonds..)
    110g/4oz fresh breadcrumbs
    1 egg (optional - still seems to hold well without it)
    3 medium parsnips, cooked and mashed with butter/margarine
    1 tspn fresh rosemary/1/2 tspn dried rosemary
    "  "   "   "  thyme  "    "    "    " thyme
    1 tspn yeast extract
    1/4 pint (150ml) hot water/stock
    seasonings to taste
    1oz butter/marg
    225g/8oz mushrooms, chopped
    (or one pack frozen creamed spinach)
    
    Preheat oven to gas mark 4, 350 degrees F (180 degrees C)
    
    Heat the oiland fry the onion and garlic until soft.  Grind the cashews
    and mix with breadcrumbs.  Beat the egg and add to dry ingredients,
    then mix in mashed parsnips and herbs.  Add fried onion and the
    oil from the frying pan.  Dissolve yeast extract in hot water/stock
    and add (don't add all at once as it MAY be too much liquid) to
    the mixture. Should be soft dropping consistency (like sponge cake
    mixture).  Melt the butter/marg in frying pan and saute the mushrooms
    until soft.  Grease a 2lb (900g) loaf tin and press in half the nut
    mixture.  Cover with layer of mushrooms (or prepared creamed spinach)
    and top with rest of nut mixture.  Cover with foil and bake for 1
    hour.  When cooked, let it stand ten minutes before removing from tin.  
                            
    Enjoy!

    Microwave Easy.
    
    2 T. butter or oleo      -  Cook on high for 60 sec.
    
    Add the following to the melted butter:
    
    2 T. Worchestershire sauce
    1 t. seasoned salt
    3/4 t. garlic powder
    1/2 t. cayenne pepper
    
    Mix well and add 4 cups Pecans.  Stir until coated.
    
    Cook, uncovered, for 9 minutes on HIGH.  Remove and stir each 3
    minutes.  Dump out on paper towel to drain. (approx 5 minutes) then
    place nuts in closed container and store.
    
    Great stuff!!

    	I tried this recipe last night and was very impressed. A couple of
     changes I made were:

    	- Shaped the mixture into a loaf and baked.

    	- Added some chopped onion.

    	- Added some tomato sauce.

    	- Added some garlic flavored olive oil
