I've done a dir/tit=maca but did not find any notes dedicated to Macadamia nuts. I received a variety pack of the nuts for Christmas. Some are plain, some salted. Has anyone used them? How do they do in place of walnuts etc. I was thinking of putting them in a date-nut or cranberry-orange nut bread. Any suggestions, pointers appreciated. Gail

Macadamia (and cashew) nuts are great for filling chocolate truffles. You can also roll the chocolates in chopped nuts too. Try them in cookies, especially chocolate chip or in your next brownie recipe. Delicious! | |||||

These nuts are so good plain I wouldn't do anything with them, just eat 'em. But if you must cook them in something, try white chocolate chips and macadamias in place of reg. chocolate chips and walnuts in Tollhouse cookies. Delicious! Martha | |||||

HAWAIIAN MACADAMIA BREAD 3 c. all-purpose flour 3 1/2 tsp. baking powder 1/2 tsp. baking soda 1/4 tsp. salt 1/4 c. butter or margarine, softened 3/4 c. sugar 2 eggs 1 can (20 oz.) crushed pinapple, well drained, reserve syrup 1 1/2 tsp. vanilla 1 c. packaged, flaked coconut 3 1/2 oz. macadamia nuts, chopped (3/4 c.) Combine flour, baking powder, soda, and salt, set aside. In a large bowl cream butter and sugar and beat until fluffy. Beat in eggs and alternately flour and 1 c. pinapple syrup. Fold in vanilla, coconut, macadamia nuts and crushed pineapple and spoon into two greased and floured 8x4 inch loaf pans. Bake in preheated 350 degree oven 55 to 60 minutes or until cake tester inserted in center comes out clean. Remove from pans and cool on wire rack. Makes 2 loaves. | |||||

HAWAIIAN MACADAMIA BITES 1 1/2 c. all-purpose flour 1/2 c. sugar 1/2 c. butter or margarine, softened 1 egg 1 tbs. vanilla 1/8 tsp. salt 5 oz macadamia nuts (approx) 1/4 c. semisweet-chocolate pieces 1 tsp shortening (Crisco) In medium bowl, with hands, knead first 6 ingredients until well mixed (mixture will be stiff). Preheat oven to 350 degrees. With hands shape 1 teaspoonful cookie dough around a macadamia nut, place on ungreased cookie sheet 1 inch apart. Bake 10 minutes or until lightly golden. remove cookies to wire rack to cool. Meanwhile, melt chocolate and shortening. With a spoon drizzle chocolate over cookies. Allow chocolate to set (refrigerate if necessary). Makes about 5 1/2 dozen. |
