Here are two recipes for cookies made with vanilla pudding: chocolate
chip (recipe follows) and oatmeal (recipe in next reply). Hope they're
close to your friend's lost recipe.

Chocolate Chip Cookies with Vanilla Pudding
2 1/4 cups unstifted all purpose flour
1 teaspoon baking soda
1 cup butter or margarine, softened
1/4 cup granulated sugar
3/4 cup firmly packed light brown sugar
1 teaspoon vanilla extract
1 box vanilla flavor INSTANT pudding and pie filling
2 eggs
1 6-ounce package mini chocolate chips
1 cup chopped walnuts (optional)
Combine flour and baking soda in small bowl; set aside. In large
mixing bowl, cream together butter, sugars, vanilla extract, and
instant pudding until smooth and creamy. Beat in eggs. Gradually add
flour mixture until well blended. Stir in chips and nuts. (Dough will
be extremely stiff.) Drop by rounded teaspoonfuls two inches apart
onto ungreased cookie sheets. Bake for 8 to 10 minutes at 375 degrees.

Oatmeal Cookies made with Vanilla Pudding
1 1/4 cups flour
1 teaspoon baking soda
1 cup butter or margarine, softened
1/4 cup granulated sugar
3/4 cup firmly packed light brown sugar
1 box vanilla instant pudding
2 eggs
3 1/2 cups quick oats
1 cup raisins (optional)
Mix flour, soda and oatmeal together; set aside. In a large mixing
bowl, cream together butter, sugars and instant pudding. Beat in eggs.
Add flour mixture; mix well by hand. If desired, add raisins that have
been rinsed in hot water. Drop by rounded teaspoonfuls onto ungreased
cookie sheets. Bake at 375 degrees for 10-12 minutes.
