2138.0. "HONEY: Spun/Creamed Honey?" by PORT::BASSETT (Santa Clara, CA) Tue Dec 05 1989 18:01

There is a type of Honey sold at stores (more on the East Coast than
out here) called Spun or Creamed Honey.

Anyone know one might make this delightful stuff at home?

    Regards,
    Greg

I tried this technique and it works great! If you like this stuff,
give it a try. It took only 3 days to prepare.

Note 181.2 How to make Creamed/Spun Honey? 2 of 4

                           -< Making creamed honey >-
--------------------------------------------------------------------------------

    Very simple process ...

    	- Get a hold of some creamed honey (Know as 'set' honey in the UK)
    	- Add it at the ratio of 1:10 to liquid honey
    	- Gently blend the seed creamed honey into the liquid base to get a
uniform distribution. This will speed the process and produce a
    	  more 'even' end result.
    	- Store at around 45-50 degrees f
    	- The seed crystals will produce a creamed honey of the same
texture and crystal size in the jar of liquid honey

For variety try mixing in some cinnamon or finely ground dried fruit
for a flavored spread. You may also want to try using a floral source
honey such as orange blossom for some other flavor combinations. The
finished product should set up in a few weeks.
